Bear Lake 2012...
We had an amazing time with family at Bear Lake this year. We went the second to last week of June. The weather was actually really great for June. We rented a boat and tubed and wake boarded the entire day away. The kids absolutely love the pools and of course Grandma and Grandpa's treasure hunt is always at the top of the list.

Lucy's One Year..and The Copper Mine...
We took Lucy to her one year well check up. What a nice girl that she waited till her checkup and we find out she has a double ear infection. Who knew. She wasn't really grumpy. Just had a slight runny nose. That helped save us some money so way to go Lucy!
Other than that she is right on track on weight and height.
After the visit I took the kids and met up with some sisters at the Kennecott Copper Mine. It was the last free day and so we took advantage of it.
Check that off of our summer fun list!
Birthday Prep...Fondant Icing...
I have been wanting to try and make a fondant cake for a while. I love when birthday's come up. It is fun to try different things that I don't normally make.
We used this recipe below.
We used this recipe below.
Directions
- Place the butter in a shallow bowl, and set aside.
- Place the marshmallows in a large microwave-safe bowl, and microwave on High for 30 seconds to 1 minute to start melting the marshmallows. Carefully stir the water and vanilla extract into the hot marshmallows, and stir until the mixture is smooth. Slowly beat in the confectioners' sugar, a cup at a time, until you have a sticky dough. Reserve 1 cup of powdered sugar for kneading. The dough will be very stiff.
- Rub your hands thoroughly with butter, and begin kneading the sticky dough. As you knead, the dough will become workable and pliable. Turn the dough out onto a working surface dusted with confectioners' sugar and continue kneading until the fondant is smooth and no longer sticky to the touch, 5 to 10 minutes.
- Form the fondant into a ball, wrap it tightly in plastic wrap, and refrigerate overnight. To use, allow the fondant to come to room temperature, and roll it out onto a flat surface dusted with confectioners' sugar.
Friday...
Loved this casual Friday we had today. We went outside in our pj's, Cole rode his bike, we drew with chalk all before 9am.
We came inside and made a list of Summer Fun Activities to do and put it in a frame so that we can check it off with a dry erase marker. We also did a Summer Goal List. I can not believe this is our last summer before Cole starts school. I want to cram so much into the summer and into his head before we have outside influences to compete with.
We also used up the extra fondant from Lucy's birthday and made sugar cookies and decorated. Who knew fondant was so fun!
Let the Summer Begin...
We pulled out the pool today. Oh, how I love summer! I love hanging out in our yard and seeing how much fun these kids have. We didn't put Lucy in a swimsuit because I thought the water would be too cold. Well that didn't stop her. No sir. She dove head first into the pool. I even glanced away to admire our plants and plop there she went. Oh boy. Was that a reminder of how careful we need to be with kids and water.
But we are way excited for the summer fun to begin!
Bee's Game...
Kevin texted at 4:00 that he could get Baseball tickets to the Bee's game and wondered if we would want to go. I said for sure! I wrapped up scouts and we scarfed down dinner and headed to the game. It was such a beautiful night. We had seats way close. Almost a little too close. The couple behind us told us to make sure we paid attention because balls kept coming right in our area. He had just caught one right before we arrived. We were a little late getting there. I was also a little worried because this older couple had dropped several swear words in the matter of minutes of us sitting down.
But despite there vocabulary, they were a very nice older couple.
The man gave Cole the ball that he caught, and the lady gave Cole and Dailey a pizza. She went and got it and than said she could not eat it. It was almost like she bought it for them.
It was so nice. It was so relaxed a chill all around us and a lady a few rows over kept saying how cute Lucy was and asked her name. I think since baseball can be so boring we were the other fun and entertaining option to watch. Since I kept seeing other people watching us. Hey I am a big people watcher too, and I think we have cute kids, so really can ya blame them.
I guess all the other families were sitting on the grass. Which for the last inning we did also.
Too bad I didn't take any pictures until the end. This is where we had a parking ticket. We checked all over to make sure this spot was ok. It was not marked so we parked there, along with a dozen other cars. We thought we might document that there was no sign of No Parking! Just in case we fight it!
Good thing the tickets were free!!!
